    Homemade pizza recipe, how to make pizza

    Homemade pizza recipe from scratch. Easy to make your own pizza dough at home. Simple procedure to enjoy pizza at home.

    After I tried pizza base at home, last month, this is the second attempt I am making. It's successful too I must say. My facebook friends might have seen my first attempt homemade pizza picture.

    I wanted to post it in my blog too. So here I have come up with a (semi) Indian flavoured pizza, I dint took much effort to make it more of Indianized version, still I tried to make it a bit spicy and Indian flavored.

    So for the Indianizing part, what I added is paneer and baby corn as topping just like we get in Chennai and I sprinkled garam masala and tandoori masala over the toppings…

    And the result is a yummy homemade Pizza, which my kid enjoyed a lot as it had the paneer and the baby corn, his favorite and of course pizza his favorite, so its a double treat for him!

    Homemade-pizza

    I just followed the base recipe and method of Raaga-The singing chef , the recipe is a keeper! Right from the salt, everything is perfect measurement.

    And If I could make, any one can make it 🙂 So don’t be afraid to try it out yourself. I have been using this for many recipe's base for a decade now.

    🧀 Cheese

    I usually go for grated mozzarella which is quick and best options. But you can also use cheese blends like Italian cheese mix, Mexican cheese mix or even Pizza cheese which is available commercially.

    Sliced cheese (not the sandwich cheese slice) or cheese blocks can also be used. I love Monterey jack or Provolone cheese along with Mozzarella.

    🌾 Best flour

    All purpose flour works just fine. (Unbleached flour or maida) Bread flour can also be used. It has more gluten content, so turns out soft and spongy.

    Substitutions

    Flour: For pan pizza, I suggest to use all purpose flour for optimum results. If you do not want to compromise on taste, you can either try 50/ 50 wheat flour and all purpose flour.

    If using fully wheat flour, I highly recommend using Bob's vital wheat gluten ( not sponsored ) for achieving the same texture.

    You can of-course substitute with any healthy flour options like Rye, or any whole grain flour, but the texture may vary. If you do not want to compromise in texture, I suggest 50 : 50 ratio along all purpose flour or use vital gluten.

    Storing

    This is the most asked question in making pizza dough at home.

    Yes, you can oil the surface of the dough, cling wrap and refrigerate upto 3 days. It can be after kneading or even after rising (punch down and knead to save in fridge). Take out when needed and leave it for rising on counter top as told in the recipe.

    Freezing

    Just like refrigerating, same way you can cling wrap and put inside a zip loc cover to freeze. To prepare the dough for making pizza, just thaw it by leaving in counter top for an hour and proceed.

    After assembling

    You can also assemble over the baking tray, cover it in cling wrap and refrigerate to bake later in the day. I would not suggest more than that in fridge.

    For freezing, after it gets frozen in the tray cling wrapped, until it is solid to touch. Cling wrap tightly and cover with an aluminium foil. You can write down the date and time for reference over the foil. This will stay put for 3 months.

    Top tip

    • Instead of olive oil, use melt butter. Adds more flavor and taste.
    • I make the dough sticky and avoid kneading too much. But you can also make the dough non sticky and knead well to bring the gluten out and result is much uniform and soft texture pizza base.
    • If you have a stand mixer or a dough kneader like my Panasonic bread maker , you should make use of it for a perfect texture.

    Yeast

    If you are using active dry yeast , it is better to proof it before using in the recipe.

    Take lukewarm water and milk in a mixing bowl. Add sugar and yeast to it. Using a whisk, dissolve completely. Keep this aside for 10 mins. It will become frothy

    Or a frothy layer will form on top. Use this mixture to knead dough. If it remains same, the yeast is not active, discard and use fresh yeast. This process is known as proofing the yeast.

    If you are using Instant yeast , no need to go through this step, just use 1 teaspoon of instant yeast for this recipe and use it along with all ingredients. Knead well.

    Oven settings

    I used a combination oven and baked the pizza in convection mode. This recipe, temperature and settings are for OTG or Convection oven/ convection mode.

    You can't do it in Microwave 'mode'. Microwave will just melt your cheese in 2 mins, so the dough and cheese may not be cooked or browned.

    Ingredients

    • 1 & ½ cup All purpose flour/ Maida
    • 1 tablespoon Active dry yeast*
    • ¼ cup Milk
    • ¼ cup Water
    • ½ tablespoon Sugar - ½ tblsp
    • ¾ teaspoon Salt - ¾ tsp
    • Olive oil - ⅛ cup Extra virgin or melt butter
    • 2 tablespoon Pasta sauce/ Pizza sauce

    Toppings:

    • ½ Onion
    • ½ Tomato Chopped, De-seeded
    • ½ Capsicum chopped
    • 2 Baby corn slit length wise
    • 8 Paneer cubes
    • ½ teaspoon Tandoori masala powder
    • ½ teaspoon Garam masala powder
    • Mozzarella cheese grated, As needed
    Prevent your screen from going dark

    Instructions

    • Gather the ingredients needed.
    • In a large bowl, add lukewarm milk, water, oil, sugar and yeast. Mix well using a whisk to dissolve the yeast completely.
    • If you are not confident about the yeast, I would suggest proofing as suggested below the ingredients table.
    • Add the flour, salt and gather first. Knead to get a smooth dough.
    • Keep covered with a wet cloth or cling wrap the mouth of bowl. Set aside untill an hour.
    • After an hour it will be rised and doubled in size.
    • Punch down the dough.
    • Again knead to make a smooth pliable dough.
    • Roll out to a 14 inch disc using rolling pin. I usually roll in such a way that in the middle I thin out and outer part, thick.
    • Pat the sides to make the circle perfect as well as forming a rim to hold the melting cheese.
    • Prick with fork in the base to ensure easy cooking.
    • Spread the sauce generously covering the base, leaving out the rim and sprinkle some cheese. (Optional to spread cheese at this stage)
    • Arrange the toppings as desired and add the grated cheese to cover the toppings.
    • Lastly to make it Indian, I sprinkled the masala powders.
    • Grease a pizza pizza pan with olive oil or just dust with some flour.
    • Transfer the rolled pizza base to the baking pan. You can roll/ wrap the base in the rolling pin gently and un-wrap in the baking pan
    • Preheat the oven for 190 degree Celsius (375 F) and bake for 14 - 15 mins..till the base starts to turn golden and the cheese turns golden brown. The base should move freely which indicates a perfectly baked base.
    • Transfer to another solid surface and cut out into 6 or 8 pieces.

    Notes

    • Proof the yeast if you are not confident about the quality.
    • Do not over do with cheese or toppings too much. It will lead to uncooked base.
    • Depending upon your oven, the baking time might vary. So experiment and fix your own temperature and timing.

    Prepare pizza dough:

    7. Again gather to make a smooth pliable dough. I didn't fly the dough in air, just rolled using rolling pin 😏(Adjust the thickness and roll out to a single base)

    1. Roll out to a 14 inch disc using rolling pin. I usually roll in such a way that in the middle I thin out and outer part, thick.

    2. Pat the sides to make the circle perfect as well as forming a rim to hold the melting cheese. (I folded in the below pic, but recommend forming a rim by patting the sides to adjust thickness as well as the shape)

      saumya,if you make a pizza smaller than this and you have got leftover dough or if you want to refrigerate you can,better you can roll out and freeze it,then when ever you need you can thaw and use ...I hav enot yet tried on my own ,still hope this will help..

      Hi, I tried this yesterday and it came out really excellent.I rolled a very thin pizza base,topping with lots of healthy veges and it tasted yummy.will soon try all other baking recipes. Thanks

      one great mistake i made was... i followed varehvah's style and used a chappati/dosa tawa to bake pizza in the oven.. Though the pizza came good, the handle of the tawa was burnt and broken to pieces at the end.

      If u live in cold countries, keep the dough covered inside the oven with oven light on. (Not hot oven, just keep the dough inside with the light on) this gives the dough a warm environment to ensure the dough rise. If the dough rises, then only it will turn out good.

      I am not sure where you go wrong. Sometimes only in the middle it may take time to cook. In that case bake for more time until it gets cooked.

      I tried the pizza y'day. The measurement i used what u have mentioned. But my dough didnot come like yours. It was very loose and sticky, so i added maida again to make it a dough but not like yours. Then i made thin pizzas the taste was good but in the corner it became hard. can you tell me where i went wrong.Do i need to lessen the water/milk.

      Even if the dough is little bit sticky(not too sticky though) try dusting the platform and roll it out. If the dough is stiff, then base becomes harder.

      Hi Raks, I tried this recipe few days back and it came out well - the taste was perfect but I have one doubt. The pizza base did not turn brown as it looks in the picture. It was well cooked and tasted perfect but the solour was light borwn or I should say off white only. If I baked for longer it would have become hard. What could be the reason, any idea? And I forgot to tell you, your pizza looks so perfect and delicious. Thanks for the recipe!!

      Did you add sugar as mentioned? Coz sugar helps in browning a lot. Also next time you can increase the baking temperature by 10 or 20 as each and every oven differs...

      Excellent pics! Drooling over it ! Pizza is something that I have been wanting to try out for a very long time! Now, I have found perfect step by step instructions in your site! Only I am nervous and I always shy away from baking ( even though I have a convection microwave) because I do not understand the baking terminology. New jargons. But now, I want to start trying. As I said, I have a microwave with all three options- micro, grill and convection. So, I can use the convection mode to make this pizza, right?
      And for how many minutes should I pre-heat the oven ? Many recipes I have read usually specifies minutes to be pre heated before starting. Or am I getting confused here? Can you please help?

      You should use convection mode and usually preheat means the same temperature you are going to bake , start heating the oven empty and it will stop or beep when the desired temperature reaches. Thank you.

      Ok. Trying again.
      The pizza taste was good. I even made the sauce myself. But the crust was not firm and crisp, but was loose. It was difficult to hold it while eating. Do you get it? I baked at 200 c for 11 mins in convection mode. But the edges had browned and the cheese was also slightly brown after melting. I took it out because the cheese would have spoilt otherwise. My dough did raise. Any idea what went wrong?

Last week i again tried making the same pizza and to my surprise it came out so so well that the dough was not enough to serve all. I was very happy and thanks for the wonderful recipes.

      Do you know how to make cheese burst pizza? Secondly, whenever I make pizza in the oven, my cheese melts before the crust gets cooked. So what happens is my cheese doesn't come out in strings . it completely melts but no strings. what to do? last of all, what is that cheese dip which is given with italian herb bread at pizza corner? that cheese dip was delicious. thanks

I have MR OTG and when i tried last week my base become hard and crispy:(, one mistake i could notice was the dough didnt raise much (prob due to yeast), just wanted to confirm with you on temperature and timing too.       It should be due to the dough, your yeast has not worked. Try proofing before you make the dough by dissolving the yeast in mild warm milk with sugar and keep aside for 5 minutes. It should raise and froth. If not the yeast is not good.
      Otherwise temperature is same. Probably you should check any setting and use racks to avoid burnt bottom. CHeck your manual for baking modes.

      Customizing pizza to indian taste is a nice idea. My wife use to prepare with lot of baby corns and paneer as you said. Thus, it becomes a fusion food when you add indian part to the italian one.
